Japan's Traditional Brewing
Japan’s traditional sake brewing was registered as UNESCO Intangible Cultural Heritage on December 5, 2024.
It refers to the sake brewing technique using ‘Koji’ mold, established by ‘Toji’ (or master brewer) and brewery workers with their long experience. The technique was settled on more than 500 years ago and has been passed down generation to generation at various regions in Japan.
