Classification of Sake's Grade
Sake is a Japanese rice wine made by fermenting polished rice.
+ 'Honzyozo-shu’ is typical sake made with rice, water, ‘Koji’ mold, yeast, and a small amount of distilled alcohol to enhance its flavor and aroma.
+ 'Junmai-shu' is sake made with only polished rice (60% or less), water, yeast, and 'koji' mold, without any added alcohol.
+ 'Ginjo-shu' is sake made with highly polished rice (60% or less) for a fruity flavor with a small amount distilled alcohol.
+ 'Daiginjo-shu’ is sake made with more polished (50% or less) rice for a lighter and more aromatics taste with a small amount distilled alcohol,
